Truck drivers have hectic schedules and it can be difficult to find time to prepare healthy snacks. Ditch the expensive and greasy take-out options and give some of these simple snack recipes a try. We have provided a handful of ideas that require few ingredients, little to no prep-time, and are tasty to eat.
Breakfast Parfait:
Ingredients:
1. Plain Yogurt
2. Granola
3. Chopped fruit of choice (Strawberries, blueberries, peaches, apples, raspberries, bananas)
4. Cinnamon or nutmeg (optional)
Cut up any kind of fruit you would like and combine in a bowl or cup with 1 cup of plain yogurt and ¼ cup of granola. Optional: Sprinkle with cinnamon or nutmeg.
Peanut butter Apples:
Ingredients:
1. Apples
2. Peanut butter
3. Local honey
Wash and chop one to two apples. Take 2 tablespoons of peanut butter and combine with 1 tablespoon of honey. Dip apples in mixture.
Bean Bowls:
This recipe is perfect for times when you are craving something heavy.
Ingredients:
1. 1 can black beans
2. 1 can corn
3. 1 tomato
4. Tortilla chips
5. Hot sauce
6. Sour cream
Combine drained beans and corn in crock-pot and heat on medium for 20-30 minutes. Put cooked beans and corn into a bowl and add chopped tomato, sour cream, and hot sauce. Eat with tortilla chips.
Mini Sandwiches:
Ingredients:
1. Crackers
2. Tuna salad or vegetarian alternative
3. Cucumber
4. Paprika
Wash and slice a cucumber. Take a cracker and add a spoonful of tuna salad or the vegetarian alternative (which uses garbanzo beans), add cucumber on top and sprinkle with paprika.
Banana Smoothie:
Ingredients:
1. 2 bananas
2. Peanut butter
3. Milk or water
4. Ice (optional)
If you do not have access to ice but have a small refrigerator in your cab, put unwrapped bananas in fridge or freezer for an hour. Take cold bananas and add to blender. Add in ½ cup of milk or water and a tablespoon of peanut butter. Blend together and enjoy!
Chocolate Chex Mix:
Ingredients:
1. Chocolate bar
2. Chex cereal
3. Raisins
4. Pretzels
Combine 1 cup Chex cereal, 1 tablespoon of raisins, and ¼ cup pretzels into a bag or bowl. Melt a bar of chocolate and pour over dry ingredients. Stir until coated and eat.
